Crumble over dessert, dip in chocolate, or just have it plain. Here is a simple honeycomb recipe for you to try!


  • 170g caster sugar
  • 65g Knockrow Ridge honey
  • 1 tablespoon glucose
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 50ml water


  • 23 x 13 cm baking tin
  • Baking paper
  • Candy thermometer
  • Large saucepan
  • Whisk


Step 1

Grease your baking tin and line with baking paper.

Step 2

In a large saucepan warm over low heat the sugar, honey, salt, and water until sugar dissolves. Bring to the boil while swirling the pot. Heat to 130°C on candy thermometer (hard crack stage).

Step 3

Remove from heat and using a whisk add the bicarbonate of soda.
The honeycomb will be very hot and will foam up quickly so exercise caution.

Step 4

Quickly pour into the lined baking tin and let cool for at least an hour.
Once cooled, break into pieces.
Store in airtight container.
